Ingredients

  • 3–4 lb sirloin tip roast

  • 2 Tbsp olive oil (or melted butter)

  • 3 cloves garlic, minced

  • 1 Tbsp kosher salt

  • 1 Tbsp coarse black pepper

  • 1 Tbsp paprika

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • (Optional) 1 Tbsp Dijon mustard for extra crust

Instructions

  1. Prep the Roast

    • Remove roast from fridge 1–2 hours before cooking so it comes to room temp.

    • Pat dry with paper towels.

  2. Season Generously

    • Mix olive oil (or butter), garlic, and seasonings into a paste.

    • Rub all over roast (if using Dijon, brush it on first, then season).

  3. Set Up the Pellet Grill

    • Preheat to 225°F.

    • Use oak, hickory, or mesquite pellets for a rich smoke, or cherry/apple for a milder sweetness.

  4. Smoke the Roast

    • Place roast directly on grill grates, fat-side up.

  5. Sear to Finish (Reverse Sear)

    • Tent with foil, rest 15–20 minutes.
